A Versatile Black Bean Salad


Give this black bean salad a try and you will get a boost of folate, fiber, protein, iron, tryptophan, antioxidants along with other nutrients that makes this a top superfood. Beans are so versatile that it gives you many healthy options in salads, to burrito's, chilli's, soups, casseroles and more.



When you want something quick for dinner or lunch make up this salad and let it chill for an hour or two. There are 6 basic ingredients and it is so versatile as you can use it as a main course or a side dish.
  • 2 tbsp. olive oil
  • 1 lemon
  • 1 can black beans
  • 1 cup frozen or fresh corn
  • 1 red bell pepper
  • 1 bunch of cilantro
Squeeze the lemon into a bowl. Add the olive oil. Chop the red bell pepper and cilantro. Add the corn and black beans and mix all together. Salt and pepper to taste. Chilling this salad brings out the subtle flavor of the lemon, and cilantro. Double ingredients for leftover's and serve with one of the following variations:

  • Warm the beans and corn in a pan and serve warm if desired.

  • Put over a head of lettuce and add a little cheese

  • Serve bean salad in a wrap with salsa and avocado

  • Serve over brown rice or quinoa

Making a meal with beans is a great replacement for animal products which are more difficult for the body to eliminate. Beans are such a healthful way to get some protein and fiber into your diet and they are very nutritious for you too.
