Sprouted Lentil Soup

I love this comforting soup...it's so easy to make and it doesn't get much better with sprouts. They cook very fast, so I add them right at the end.

Ingredients:

- 3/4 cup sprouted lentils

- 1 sweet potato, peeled and cut into cubes

- 1 onion, sliced

- 1 tbsp olive oil or flaxseed oil

- Himalayan rock salt, to season

Preparation:

Boil the sweet potato with the onion in a medium-sized pot of water. When tender, add the sprouts and cook for a minute or so. Taste test! Take off the heat, and add the oil and salt.

Garnish with fresh herbs.

Sprouting Method:

(Do in advance) 1. Soak the lentils in twice the amount of water, overnight.

2. In the morning, pour out the water and drain.

3. Let them sit in a glass jar covered with cheese cloth (attached with a rubber band). They will sprout better in the sunlight. Rinse them with clean water once a day, always draining.
